This homemade chutney is a lovely condiment to serve with cheese, pork or a lovely meat terrine. It’s really easy to make and a hit with friends and family who always tuck in for several extra servings when you leave it out of the table. Why not give it a try.
Makes: Approximately 400g
You will need:
50 ml groundnut oil
200 g onions, thinly sliced
60 g soft brown sugar
75 ml white wine vinegar
1 apple, about 100 g, peeled, cored and cut into large dice
75 g tomatoes, peeled, deseeded and cut into small dice
5 white peppercorns, crushed
1/4 tsp salt
1 garlic clove, crushed into a purée
1/4 tsp chill powder
1 pinch of ground cinnamon
Method:
(1) Heat the groundnut oil in a saucepan.
(2) Add the onions and sweat gently over a low heat for 10 minutes.
(3) Add the sugar and cook until the onions are lightly caramelised, remember to stir.
(4) Pour in the white wine vinegar to deglaze and cook off for 3 minutes.
(5) Add all the remaining ingredients.
(6) Cook and stir frequently over a gentle heat for around 25 minutes until the chutney thickens. To test is the thickness is right you should be able to draw your wooden spoon across the bottom of the pan and the chutney should leave a clear path for a few seconds.
(7) Pour the chutney into a sterilised preserving jar and seal. This will keep in the fridge for up to a month.
(8) Serve with cheese or a lovely game terrine.
